McPimps, i miei biscotti "digestive"

Nell'estate del 2005 mi trovavo a Londra ospite da amici, e durante l'ora del tè mi vennero offerti dei grandi biscotti coperti di cioccolato al latte, questi biscotti erano i McVitie's e fu amore fin dal primo morso! Ma vediamo come sono nati i biscotti più famosi d'Inghilterra.
Nel 1809 un ragazzo di nome Robert McVitie iniziava a lavorare come aiutante fornaio.
Dopo 20 anni con il padre aprirono un emporio in Rose Street ad Edimburgo. Nel 1844 si sposò e naquero i figli che mandò a studiare per specializzarli in prodotti da forno. Quando mori nel 1884, il primogenito apri una grande attività specializzata in biscotti. Nel 1892 il giovane dipendente Alexander Grant inventò per la grande azienda, la famosissima ricetta dei biscotti “digestive”, perché si riteneva che l'alto contenuto di bicarbonato in essi contenuto facilitasse la digestione, tale ricetta è ancora segreta. Nel 1987 vennero inventati i biscotti al cioccolato al latte, nel 1999 la variante al caramello, nel 2009 i biscotti integrali.
Spinta dal bel ricordo di quel periodo ho pensato di riprodurli in casa apportando alcune modifiche rispetto agli ingredienti riportanti nella confezione. Gli ho dato il nome di McPimps (il perché è un segreto).
 Il risultato consiste in biscotti leggermente croccanti ma friabili, buonissimi, vicino all'originale ma non identici.

Ecco a voi le dosi:

100g di farina tipo 0 BIO
100g di farina integrale BIO
1cucchiaio di farina di avena o di segale integrali BIO
60ml di olio di mais
40g di burro (o 50ml di olio di mais)
50g di zucchero di canna
2 pizzichi di sale fino
4 cucchiai di acqua o 6 fino ad ottenere la consistenza giusta
1 cucchiaino di lievito per dolci in polvere
1 cucchiaino colmo di orzo solubile
1 cucchiaino di zucchero di canna di cocco

Impastate tutto insieme e mettere in frigo minimo per 30 minuti, stendere la pasta sottile circa 3mm e creare dei biscotti con stampo rotondo o con una tazza.
Infornate a 180°C per 20 minuti, se li volete al cioccolato al latte o fondente, una volta cotti e freddi spennellarli con cioccolato fuso e lasciarli asciugare.

In the summer of 2005, I was in London visiting friends, and during tea time I was offered the big biscuits covered in milk chocolate, these cookies were the McVitie's and it was love from the first bite! But let's see how the cookies were born the most famous in England. 
In 1809 a guy named Robert McVitie began to work as an assistant baker. 
After 20 years with his father opened a general store in Rose Street in Edinburgh. In 1844 he married and their children were born who sent him to study to specialize them in baked goods. When he died in 1884, the eldest son open a large business specializing in biscuits. In 1892, the young employee Alexander Grant invented for the great company, the famous biscuit recipe "digestive," because it was believed that the high content of bicarbonate contained in them would facilitate digestion, this recipe is still secret. In 1987, the cookies were invented milk chocolate, caramel variant in 1999, in 2009 the wholemeal biscuits. 
Boosted by the good memories of that time I thought I'd play them at home by making some changes with respect to the bearing ingredients in the package. I gave him the name of McPimps (why it's a secret). 
  The result is slightly crisp but crumbly biscuits, delicious, close to the original but not identical. 

Here you are the doses:

100g flour type 0 BIO 
100g wholemeal flour BIO 
1 tablespoon of oat flour or rye grains BIO 
60ml corn oil 
40g butter (or 50ml corn oil) 
50g brown sugar 
2 pinches of salt 
4 or 6 tablespoons of water until you get the right consistency 
1 teaspoon of baking powder 
1 heaping tablespoon of barley soluble 
1 teaspoon of brown sugar coconut 

Mix everything together and refrigerate for at least 30 minutes, roll the dough thin about 3mm and create cookies with round mold or with a cup. 
Bake at 180 ° C for 20 minutes, if you want them to milk chocolate or dark chocolate, once cooked and cold brush with melted chocolate and let them dry.

Spello, un borgo tra i fiori

Dopo un piacevole e rilassante soggiorno in Umbria, ho deciso di
raccontare un frammento di questa splendida regione che ancora non conoscevo, l'Umbria è affascinante per tanti motivi, per la storia e le prelibatezze culinarie e soprattutto per i paesaggi immersi nel verde e nella natura.

Dopo la bella Perugia e la storica Gubbio, ho deciso di soggiornare in una cittadina deliziosa sospesa nel tempo, Spello. Risalendo una ripida collina immersa nel verde ci si ritrova al centro di questo antico borgo che testimonia un passato ricco di storia prevalentemente di epoca romana.
Il paese è accessibile da tre porte chiamate rispettivamente: Porta Venere, Porta Urbicale, Porta Consolare. Tra i grandi tesori artistici che vengono conservati a Spello, vi sono sicuramente gli affreschi del Pinturicchio all'interno della Cappella Baglioni, nella Chiesa di S. Maria Maggiore.

Di particolare interesse storico-architettonico, è
l’area alto collinare montana che comprende due villaggi di origine medioevale: San Giovanni e Collepino. 
Ciò che amo di più di questo piccolo borgo è la coerenza architettonica di tutte
le case, rimaste coerenti alle strutture originarie anche nella loro ristrutturazione, tale coerenza per me è una discriminante
fondamentale e indice di qualità paesaggistica di un luogo.

Subito colpiscono le casette di pietra curate nei minimi dettagli e poi i tanti fiori che contrastano con i muri candidi di pietra.
Proprio i fiori fanno di Spello una cittadina vivace e colorata
che in occasione della festività del Corpus Domini (nona
domenica dopo la Pasqua), vengono mostrati nelle manifestazioni a tema floreale come le “Infiorate di Spello”. Durante tale evento, gli infioratori lavorano intensamente per una intera notte per realizzare tappeti e quadri floreali che tappezzano le vie del centro storico per celebrare il passaggio del Corpo di Cristo, portato in processione dal vescovo la domenica mattina.

Si formeranno quindi dei percorsi di circa 1,5 km caratterizzati
dall’alternarsi di oltre sessanta diverse infiorate.

After a pleasant and relaxing stay in Umbria, I decided to 
tell a piece of this beautiful region that still do not know, Umbria is fascinating for many reasons, for history and culinary delights and especially for green landscapes and nature. 

After the beautiful and historic Perugia Gubbio, I decided to stay in a lovely town suspended in time, Spello. Going up a steep hill surrounded by greenery you will find yourself at the heart of this ancient village that bears witness to a rich history mainly from Roman times. 
The country has three gates respectively called: Porta Venere, Urbicale Porta, Porta Consular. Among the great artistic treasures that are kept in Spello, you are definitely the frescoes by Pinturicchio in the Baglioni Chapel in the church of S. Maria Maggiore. 
Of particular historical and architectural interest, it is 
the high hilly mountainous area which includes two villages of medieval origin: San Giovanni and Collepino. What I love most about this small village is the architectural coherence of all 
houses, remained consistent with the original structure even in their restructuring, such consistency for me is a discriminating 
fundamental index and landscape quality of a place. 
Immediately hit the stone houses with attention to detail and then the many flowers that contrast with the white walls of stone. 
Just do the flowers of a lively and colorful Spello 
that on the occasion of the feast of Corpus Christi (ninth 
Sunday after Easter), are shown in the demonstrations in floral theme as the "Infiorate of Spello". During this event, the flowers work hard for a whole night to make rugs and floral paintings that adorn the streets of Old Town to celebrate the passage of the Body of Christ, led by the bishop in procession on Sunday morning. 

It will then form the paths of about 1.5 km characterized 
alternation of over sixty different infiorate. 

If you find yourself in those parts or decide to make a trip to Umbria relaxing, nature and spirituality, you can not go through this beautiful town green.

"Su Nenniri", la tradizione pagana

Buona Pasquetta a tutti, dopo i festeggiamenti di Pasqua trovo il tempo per parlarvi di un rito pagano molto particolare e interessante, "Su Nenniri"!

Questo rito è vecchissimo e tipico dei paesi del Mediterraneo e resiste in ogni paese con i suoi miti. In Grecia e in Asia Minore, per esempio, si realizzano tutt'oggi i giardini di Adone, che si creano riempiendo dei vasi con germogli di cereali che con la loro crescita e appassimento veloce simboleggiano la vita della divinità e la sua morte, dopodiché vengono nuovamente gettati nell'acqua per germogliare nuovamente e simboleggiare la resurrezione del dio.
Nella Sardegna antica, invece, il mito parla di sacerdotesse deputate al culto dell'acqua, che mettevano in scena la morte del dio, cui seguiva il pianto delle prefiche( donne pagate per piangere ai funerali) e poi, il matrimonio tra il mascolino e la Dea Madre che veniva accompagnato da cerimonie dinanzi a tutta la popolazione in processione. Oggi questo mito è stato sostituito dal rito della processione in "S'INCONTRU" ovvero l'incontro della Madre di Gesù e suo figlio risorto. Nel lontano passato, in Sardegna, prima del cristianesimo, questo rituale stava ad indicare il solstizio di primavera, e quindi il passaggio dall'inverno freddo e buio alla rinascita della vita in primavera.
Tale usanza è, appunto, quella chiamata "Su Nenniri" ed è attualmente diffusa in tutta l'isola.

"Su Nenniri" si può preparare con diversi tipi di seme, ma tradizionalmente vengono utilizzati i semi di grano, meno di orzo e lino. Consiste nel disporre i semi di grano in dei piccoli vasi colmi di terra, per due-tre settimane prima della Pasqua, e conservati e innaffiati in luogo buio e caldo; i germogli in assenza di luce cresceranno di una colorazione bianco-giallina poi gradualmente verdina quando esposti alla luce (vedi prima foto). A quel punto i vasetti andranno decorati con fiori e nastri, e regalati in segno di buona fortuna e prosperità. "Su Nenniri" avuto in regalo deve essere messo al centro della tavola per il pranzo di Pasqua e lì tenuto fino a che non appassisce. A Cabras, e in altri paesi della Sardegna Campidanese e Ogliastrina, "Su Nenniri" viene preparato a fine maggio per la festa della Patrona Santa Maria (che coincide con la dea Madre) ed esposto un mese dopo e poi ritirato per beneficiare dei poteri magici ad esso conferiti.
In altre aree della Sardegna "Su Nenniri" veniva seminato nel periodo di maggio e preparato per San Giovanni(giorno prodigioso nella tradizione Sarda), e quindi anch'esso raccolto per utilizzarne i poteri magici acquisiti. 
Questo rituale ancora vivo, segna la volontà di un popolo di far sopravvivere quelle usanze pagane che simboleggiano il legame ancestrale con la propria terra e tradizioni.

Good Monday to everyone, after the celebration of Easter I find the time to tell you about a pagan ritual very unique and interesting, "Su Nenniri"! 

This rite is very old and typical of the Mediterranean countries and resists in every country with its myths. In Greece and Asia Minor, for example, are realized today the gardens of Adonis, which are created by filling the jars with sprouts of grains with their growth and withering fast symbolizes the life of the gods, and his death, after which they are again thrown into the water to sprout again and symbolize the resurrection of the god. 
In ancient Sardinia, however, the myth speaks of priestesses appointed to the worship of water, which dramatized the death of the god, which was followed by the weeping mourners (women paid to cry at funerals) and then, the marriage between the masculine and the Mother Goddess who was accompanied by ceremonies in front of all the people in the procession. Today, this myth has been replaced by the ritual of the procession in "S'incontru" or the meeting of the Mother of Jesus and her son resurrected. In the distant past, in Sardinia, before Christianity, this ritual was to indicate the spring solstice, and then the transition from winter cold and dark to the rebirth of life in spring. 
This custom is, in fact, the one called "On Nenniri" and is now widespread throughout the island. 

"On Nenniri" can be prepared with different types of seed, but traditionally are used the seeds of wheat, barley and flax less. Consists of arranging the wheat seeds in small pots filled with earth, for two to three weeks before Easter, and watered and kept in dark, warm place; sprouts grow in the absence of light of a yellowish-white color and gradually light green when exposed to light (see first photo). At that point, the jars will be decorated with flowers and ribbons, and given away as a sign of good luck and prosperity. "On Nenniri" had a gift should be put at the center of the table for Easter dinner and kept there until it wilts. A Cabras, Sardinia and other countries campidanese and Ogliastrina, "On Nenniri" is prepared at the end of May for the feast of the patron saint Santa Maria (which coincides with the Mother Goddess) and exposed to a month later and then withdrawn to benefit from the magical powers conferred upon it. 
In other areas of Sardinia "On Nenniri" was sown during May and prepared for San Giovanni (day prodigious in the Sardinian tradition), and then also collected to use its magical powers acquired. 
This ritual is still alive, marks the will of a people to survive those pagan customs that symbolize the ancestral link with their land and traditions.

Makové lokše


Da tempo avrei voluto scrivere di questa ricetta slovacca che ho avuto modo di conoscere mesi fa.

Nel Natale scorso mi sono recata a Bratislava in vacanza, e ho avuto modo di conoscere questa cultura che tra l'altro ha anche una ricca tradizione culinaria. Ovviamente essendo un popolo del Nord, possiede delle pietanze abbastanza ricche e caloriche.

Tra le mie ricette slovacche preferite, ho scelto di parlarvi di queste frittelle o crepe ai semi di papavero (conoscete la mia passione per i papaveri :)) chiamate in slovacco, Makové lokše.

Solo a nominarle mi tornano in mente i bellissimi momenti vissuti passeggiando tra i mercatini di Natale con in mano del vin brulè e le mie frittelle.

Ma adesso veniamo a noi, eccovi la ricetta:


Makové lokše


500g di patate lessate con la buccia

150g farina

un pizzico di sale

ripieno:

burro(la ricetta originale prevede grasso di anatra),zucchero al velo, semi di papavero e confettura di prugne

(in alternativa crema di nocciole e zucchero al velo)

Passate le patate nel passa-verdure, unite la farina e il sale, impastate il tutto e create con la pasta ottenuta un cilindro da cui si ricaveranno dei dischi di pasta. A questo punto stendere i dischi ottenendo delle sfoglie sottili e circolari che andranno cotte alcuni minuti in piastra per crepe o piastra antiaderente da entrambi i lati fino a quando non si creeranno delle macchie brune, spennellate delicatamente con burro o olio e mettetele da parte. Intanto prendete i semi di papavero e mischiateli in un piatto con lo zucchero al velo. Riprendete ogni crepe (che può essere consumata tale quale come pane) e su di un lato, velatele leggermente con della confettura di prugne, cospargete con il mix di zucchero al velo e semi di papavero. A questo punto arrotolate le crepe e disponetele sul piatto da portata e cospargere di zucchero al velo e semi di papavero.

For a long time I wanted to write this recipe Slovak that I got to know months ago. 

In the last Christmas I went to Bratislava on vacation, and I got to know this culture which by the way also has a rich culinary tradition. Obviously being a people of the North, possesses rich enough food and calories. 
Among my favorite recipes Slovak, I chose to talk about these pancakes or crepe poppy seeds (you know my passion for poppies :)) calls in Slovak, Makové lokše. 
Only to name them I recall the beautiful moments spent walking through the Christmas market with mulled wine in hand and my pancakes. 
But now we come to us, here's the recipe: 

Makové lokše 

500g of boiled potatoes in their skins 
150g flour 
a pinch of salt 
filling: 
butter (the original recipe calls for duck fat), icing sugar, poppy seeds and plum jam 
(alternatively, hazelnut cream and icing sugar) 


Pass the potatoes in the through-vegetables, add the flour and salt, knead with the dough and create a cylinder from which we derive the disks of dough. At this point, stretch the disks of getting thin sheets and circulars that will be cooked in a few minutes the plate for cracks or non-stick griddle on both sides until brown spots will be created, brush lightly with butter or oil and set aside. Meanwhile, take the poppy seeds and mix them in a bowl with the icing sugar. Take back any cracks (which can be consumed as such as bread) and on one side, slightly velatele with the plum jam, sprinkle with mixture of icing sugar and poppy seeds. At this point, rolled up the cracks, and arrange on a serving dish and sprinkle with icing sugar and poppy seeds.

Papaveri

Buongiorno a tutti! La giornata stupenda di oggi mi ha permesso di dedicarmi ai papaveri e al loro trapianto.

Ho avuto in dono da cari amici i semi di papavero da oppio (Papaver somniferum), pianta bienne che possiede fiori bianchi, rosa, malvacei o viola, in base alle varietà. Da esso si estrae l’oppio. Questa specie può essere coltivata a scopo ornamentale, poiché è illegale solo l’estrazione dell'oppio ma non la coltivazione della pianta. I papaveri non prediligono i terreni acidi ma quelli calcarei o neutri. Resistono ai suoli aridi e drenati e necessitano di essere innaffiati solo quando il terreno è asciutto.

Fiori di Borragine

È arrivato il momento della borragine! 
La Borago officinalis L. con il suo azzurro intenso dei petali, spicca tra i fiori di primavera.
 Si tratta di una pianta erbacea annuale della famiglia delle Boraginaceae, è frequente nei pascoli e prati incolti e bordi delle strade. La bellezza dei fiori viene offuscata dalla densa peluria che ricopre tutta la pianta. Può crescere fino a 80 cm. I fiori hanno cinque petali che creano una stella azzurra da aprile a settembre. Per la loro bellezza e forma particolare possono essere utilizzati per decorare un angolo della nostra casa, inserendo solo i fiori all'interno di un contenitore di vetro.
 Io li ho inseriti all'interno di una coppa. Potete inserire anche i boccioli, sbocceranno dentro l'acqua.

L'infuso dei fiori e delle infiorescenze si possono utilizzare come cosmetico, sia come tonico per la pelle irritata e impura, sia nell'acqua del bagno per decongestionare la pelle. L'olio dei semi di borragine essendo un buon antinfiammatorio naturale, così come quello di enotera, viene utilizzato efficacemente nelle imperfezioni della cute, spesso è inserito in molte creme per il contorno occhi in quanto più leggero di altri oli vegetali.
 Tra le sostanze presenti in esso, vi sono: acidi grassi essenziali come Omega 6, acido linoleico e gammalinoleico, fitoestrogeni, calcio, potassio, vitamina C, acido palmitico e tannini.

Vi riporto la ricetta per un decotto da utilizzare come tonico.
Occorre: 150 g di foglie e fiori di borragine e 1,5 l di acqua. 
Fate bollire nell'acqua le foglie di borragine per 10 minuti. Lasciare intiepidire e filtrare bene. Usare il decotto come tonico con un batuffolo di cotone. 
Filtrate con un telo per eliminare i rigidi peli setolosi.

The time has come borage! 
The Borago officinalis L. with his intense blue of the petals, stands out among the flowers of spring. 
  It is an annual herbaceous plant of the family Boraginaceae, is common in pastures and fallow fields and roadsides. The beauty of flowers is obscured by the dense hairs covering the whole plant. It can grow up to 80 cm. The flowers have five petals that create a blue star from April to September. For their beauty and particular form can be used to decorate a corner of our house, entering only the flowers in a glass container. 
  I have them inserted into a cup. You can also enter the buds, bloom into the water. 

An infusion of the flowers and inflorescences can be used as a cosmetic, and as a tonic for the skin irritated and impure, is in the bath for soothing the skin. The oil of the seeds of borage being a good natural anti-inflammatory, as well as that evening primrose oil is used effectively in the imperfections of the skin, it is often included in many creams for the eye because it is lighter than other vegetable oils. 
  Among the substances contained in it, are: essential fatty acids like Omega 6, and especially gamma linoleic acid, phytoestrogens, calcium, potassium, vitamin C, palmitic acid and tannins. 

I will give you the recipe for a decoction used as a tonic. 
You need: 150 g of leaves and flowers of borage and 1.5 l of water. 
Boil water leaves borage for 10 minutes. Allow to cool and filter well. Use the decoction as a tonic with a cotton swab. 
Filtered through a cloth to remove the rigid bristly hairs.
